Waffle Wednesday – Vafler med Røke Laks eller Fenalår – Waffles with smoked salmon or fenalår

If you would like to do a complete waffle fest for syttende Mai, there are so many both sweet and savory recipes you could pick between! 

Here is a savory recipe, where you can choose between smoked salmon or fenalår as the filling. What is fenalår you ask? It is cured leg of lamb, with a bit more details on this Wikipedia link. If you’d like to try it out with fenalår, without going to the extent of curing and salting your own meat, you could check with a local Scandinavian shop whether they carry it!

Delicious savory waffles with traditional Norwegian fillings. Perfect for a everyday meal, or as an addition to any Norwegian themed celebration.

Just as a heads up, this waffle recipe requires the Scandinavian style heart waffle iron, not the thicker Belgian/American waffle irons.

Ingredients

Waffle Batter

  • 5 eggs.
  • 150 grams / 5 oz all purpose flour.
  • 100 grams / 3.5 oz whole wheat flour. 
  • 4 dl 13.5 oz kefir. 
  • ½ dl olive oil.
  • 1 tablespoon sugar.
  • 1 teaspoon baking powder.
  • 2 teaspoons salt.
  • 100 grams / 3.5 oz rolled oats.
  • 2 tablespoons sesame seeds (optional)

Smoked Salmon Filling

  • Cream cheese.
  • 12 salad leaves.
  • 300 gram / 10.5 oz smoked salmon.
  • Fresh chives.

Fenalår Filling

  • 300 grams / 10.5 oz sliced fenalår.
  • 300 grams / 10.5 oz chévre (French goat cheese) 
  • 1dl / 3.5 oz milk, cream, or sour cream
  • 3 tablespoons lingonberries or lingonberryjam. 
  • 12 salad leaves.

Instructions

  1. Put all the flour in a mixing bowl and add the kefir, dividing the kefir into three and stirring well between each time to avoid lumps.
  2. Whip in the eggs, and add oil, sugar, baking powder, and salt. Add the oats at the end. Let the batter rest for at least 30 minutes before cooking.
  3. If using the sesame seeds, sprinkle these on the waffle iron before adding the batter. Cook waffle until golden. Put aside to cool.


For the Smoked Salmon filling:
* Spread cream cheese over half the waffle, add salad leaves and salmon. Sprinkle over some chopped fresh chives and close the waffle. If necessary, use a tooth pick to keep the waffle closed.

For the Fenalår filling:
* Mix together chévre and the milk/cream/sour cream (Just pick one of these liquids) and spread the mixture on one half of the waffle. Add some lingonberries/lingonberry jam on top of the chévre cream. Then add the salad leaves and slices of fenalår. Close the waffle, use a toothpick to keep the waffle closed if necessary.
