Waffle Wednesday – Vafler med Karamelliserte Epler (Waffles with Caramelized Apples)

It’s Waffle Wednesday and we’re headed into fall (or already in fall for some, colors are already changing here in Norway!) so I figured a perfect combination could be waffles and apples.

Now to make these,  you need to have prepared a batch of waffles first, as this recipe is for just the topping! Here you can find my base recipes for waffles!

Waffles with Caramelized Apples

Sweet, salty, soft, and crunchy - these waffles with caramelized apples are a perfect fall treat!

Ingredients

Caramelized Apples

  • 3 apples, preferably green apples.
  • 2 tablespoons butter for cooking.
  • 200 grams / 7 oz sugar.
  • ½ dl / 1.7 oz water.
  • 50 grams / 1.8 oz unsalted butter.
  • 1.5 dl / 5 oz heavy cream.
  • ½ teaspoons salt.

Egg Cream

  • 4 egg yolks.
  • 3 dl / 10 oz milk. 
  • ½ dl / 1.7 oz sugar. 
  • 1 tablespoon corn starch.
  • 3 plates of gelatin. 
  • ½ dl / 1.7 oz heavy cream.

Spice Crumble

  • 1 tablespoon for cooking.
  • 6 tablespoons dry breadcrumbs.
  • 2 tablespoons sugar.
  • ½ teaspoons cinnamon.
  • 1 tablespoon freeze-dried raspberries. (Optional)

Instructions

  1. Make the egg cream. Add yolks, milk, sugar, corn starch, and gelatin plates to a pot.
  2. Heat up while continuously stirring until the cream thickens. When the consistency is that of a thick custard, take it off the plate and pour into a bowl. Cool and let the cream set. Whisk the cream before using, so it'll be smooth and lump free.
  3. Peel the apple and cut them into even squares. Fry the dices in a frying pan with butter until they're starting to get tender. Set aside while you make the caramel.
  4. Melt sugar and water in a small pot until you get a nice golden caramel. Make sure it does not burn.
  5. Add in cream and salt, stir together and let it boil for a few minutes.
  6. Set the pot aside, and let it cool down a little. Stir in diced unsalted butter and add the apple as well. Leave in room temperature until the waffles are ready to serve.
  7. Whip the heavy cream and turn it into the egg cream.
  8. Make the spice crumble: Melt butter in a frying pan and fry the bread crumbs on medium heat until it starts turning golden. Sprinkle over sugar and cinnamon and cook until the sugar has melted. Cool on baking paper.
  9. Top freshly made waffles with the caramelized apples, egg cream and the spice crumble. If you'd like, add the freeze-dried raspberries as topping.
