
Suolaiset vohvelit sillitäytteellä – Salty waffles with herring
For this weeks Waffle Wednesday I have a savory one, Finnish salty waffle recipe with a herring topping!
This could be a great addition to your Easter table, or maybe a great little snack for summer.
As I have mentioned in previous waffle entries, please keep in mind that for Finnish waffles, or Scandinavian waffles in general, you will need a heart waffle maker. The biggest difference here isn’t that they’re heart shaped, but they are also a lot thinner than the usual American/Belgian waffles. A waffle maker like this would be perfect, and let’s you cook two at the time!

Delicious savory waffles with a herring topping. A great addition to your Easter table, or any summer get together.
Ingredients
Waffles
- 50 grams / 1.7 oz butter.
- 1 ¾ dl / 6 oz all purpose flour.
- 1 teaspoon baking powder.
- 1 ¼ dl / 4 oz whole milk.
Herring topping
- 25 grams / 1 oz butter.
- 2 boiled eggs.
- 200 grams / 7 oz herring fillets.
- Fresh Chives.
- ½ red onion.
- 1 dl / 3 oz sour cream.
- 2 radishes.
- Vegetable cress.
Instructions
The waffles:
- Melt the butter and allow to cool. Mix the flour and baking powder in a bowl. Add the milk and stir until you have a smooth batter, stir the butter into the batter.
- Let waffle batter rest in the fridge for about 10 minutes.
- Fry the waffles in a greased waffle iron. Allow waffles to cool on the rack.
The herring topping:
- Peel and chop the eggs,
- Dice the herring.
- Chop half of the red onion and chives (So it measures about 2 tablespoons)
- Mix eggs, onions, and herring.
When both are done, it's time to assemble the waffles. Top the waffle with a dollop of sour cream, herring filling, radish, and cress. If desired, also top the mix with a bit of browned butter.
Serve the waffles immediately!
