Long time no see! Let’s see if I can break out of this pattern of inconsistent recipe posting by starting at Waffle Wednesday! For today we have these delicious sourcream waffles with berries and goat cheese! A delicious treat to have on a fall day!

Delicious Norwegian sour cream waffles with berries and brown cheese!

Ingredients

Waffles

  • 2 dl / 7 oz whole milk.
  • 4 eggs.
  • 3 dl / 10 oz all purpose flour.
  • 1 teaspoon salt.
  • 3 tablespoons sugar.
  • ½ teaspoon baking powder.
  • 5 dl / 17 oz sour cream.
  • 2 tablespoons butter - for cooking.

For serving

  • 4 dl / 13.5oz berries. (Your choice of raspberries, strawberries, blueberries or black currants.)
  • 1 tablespoon brown sugar.
  • 2 dl / 7 oz sour cream.
  • 100 grams brown cheese / Norwegian goat cheese.

Instructions

  1. Mix together milk and eggs. Add flour, salt, sugar, baking powder, and sour cream. Stir until you got a smooth batter with no lumps.
  2. Heat a waffle iron, grease with butter and add a ladle of batter. Cook until waffles are golden. Grease well between each waffle. Cool on a rack.
  3. Mix together the berries and mash them gently with a fork.

Serve the waffles with slices of brown cheese, a heaping spoon of sour cream and the berry mixture.
