We’re well into January and many are probably back into the everyday routine of things, so I thought this delicious and simple sheet pan dinner could be a great recipe addition!

Sheet pan pancake with cheese&bacon

A delicious sheet pan dinner that is done in an hour! Perfect for a busy weeknight and you need a easy dinner for the family.

Pancake batter

  • 2 tablespoons butter.
  • 200 grams / 7 oz all purpose flour.
  • 80 grams / 3 oz whole wheat flour (rye or spelt)
  • ½ teaspoon salt.
  • 7 dl / 24 oz milk.
  • 3 eggs.


  • 140 grams / 5 oz bacon.
  • 100 grams / 3.5 oz grated cheese.
  • ½ teaspoon ground pepper.


  1. Start by pre-heating the oven to 210C / F, and by melting the butter.
  2. Mix flour, salt, milk, eggs, and butter in a bowl. Use a whisk or a hand mixer to mix to a smooth batter.
  3. Let the batter rest for about 20 minutes. Cover a sheet pan with parchment paper and pour in the batter.
  4. Top the batter with grated cheese, bacon slices, and pepper.
  5. Bake the pancake in the oven for 20-30 minutes until golden and cooked throughout.
