We’re halfway in the week and for this weeks Waffle Wednesday we have this delicious and savory recipe for Finnish Potato&beetroot waffles!

A delicious savory recipe for Finnish Potato and beetroot waffles

Cook Time 45 minutes
Additional Time 30 minutes
Total Time 1 hour 30 minutes

Ingredients

  • 3 eggs
  • 4 dl / 13.5 ounces milk
  • 1 ½ teaspoon salt
  • Pinch of black pepper
  • Thyme
  • 2 dl / 6.8 ounces whole wheat flour
  • 2 teaspoons baking powder
  • 4 small potatoes
  • 2 small beets
  • 75–100 grams / 2.6-3.5 ounces melted butter or margarine

Instructions

  1. Crack the eggs into a bowl and mix to break the texture of the eggs.
  2. Add milk, salt, spices and flour mixed with baking powder.
  3. Let it swell for about half an hour.
  4. Grate the raw potatoes and beets into a fine grater and add to the batter with the melted fat.
  5. Bake waffles from the batter.

In addition, serve with roe and sour cream seasoned with salt, sugar and mustard.
