Pannukakku – Finnish ovenbaked pancake

Starting off the new year with a easy and delicious recipe for Pannukakku – Finnish oven baken pancake. A very traditional dish and favorite for many!

Pannukakku - Finnish oven baked pancake

A delicious and traditional recipe for Finnish oven baked pancake.

Ingredients

  • 5 dl / 2 cups all purpose flour.
  • 1 liter / 4 cups whole milk.
  • 4 eggs.
  • ½ teaspoon salt.
  • 1 teaspoon sugar.
  • 100 grams / 1 stick butter.

Instructions

  1. Start making the pancake mixture by mixing eggs, salt, sugar, flour, and melted butter with the milk in a large bowl. Beat into a smooth batter.
  2. Let the batter rest for at least an hour. This is important as it helps give the finished pancake the right spongy texture.
  3. Heat the oven to 200C/400F.
  4. Pour the pancake batter onto a baking sheet lined with parchment paper.
  5. Bake the pancake on the middle level in the oven for 30 minutes, until the pancake has a nice golden paper.
  6. Serve the pancake with your prerferred sides. For example, jams and berries, whipped cream, butter, or maple syrup.
