Nakkikeitto – Finnish Sausage soup

Here is a recipe for nakkikeitto – a delicious and easy Finnish sausage soup! A great weeknight dinner to be enjoyed by the whole family!

Traditional sausage soup is a tasty everyday meal for the whole family. Serve delicious sausage soup with sour cream.

Ingredients

  • 400 grams / 14 ounces sausage.
  • 20 grams / 0.7 ounces butter.
  • 6 medium potatoes.
  • 4 carrots.
  • 200 grams / 7 ounces rutabaga.
  • 1 small leek.
  • 2 onions.
  • 2 garlic cloves.
  • 1 bundle of parsley leaves.
  • 1 broth cube.
  • 2 bay leaves.
  • 5 allspice.
  • 1 tablespoon honey.
  • 1 teaspoon white pepper.
  • Salt.
  • 200 grams / 7 ounces sour cream.

Instructions

  1. Start the sausage soup by first chopping the sausage. Then fry it in butter in a pan until they have a little color on the surface. Set aside to wait.
  2. Chop onion and garlic. Add to the pot and sauté lightly in butter.
  3. Wash and chop the potato and carrot. Peel the rutabaga and put all the vegetables in the pot.
  4. Add 1.5 liters / 0.4 gallons of water to the pot and put it on the plate to heat up.
  5. Season the soup: add 1 meat stock, 2 bay leaves, allspice, salt, honey and white pepper. Let it boil until the vegetables are cooked.
  6. Finally, cut the leek and add it to the pot with the sausage. Mix everything and taste. Add spices to your taste.
  7. Finish the soup with parsley and enjoy with sour cream.
