It’s January and we’re all getting back into the normal daily rhythm, here is a delicious Finnish macaroni casserole perfect for your weeknight meal!

Want a easy and delicious weeknight meal, just like the Finnish families do? Give this macaroni casserole a try!

Ingredients

  • 400 grams / 14 oz minced meat.
  • 1 onion.
  • Butter.
  • 250 grams / 9 oz macaroni.
  • 3 eggs.
  • 100 grams / 3.5 oz cheese.
  • Salt.
  • 1 teaspoon pepper.
  • ½ teaspoon lemon pepper.

Instructions

  1. Start by boiling the macaroni according to the instructions on the box.
  2. Peel and chop the onion. Brown the chopped onion in a frying pan in a little butter.
  3. Add the minced meat to a properly heated pan and brown until cooked. Season the minced meat with black and lemon pepper.
  4. Pour the cooked and rained macaroni with the cooked minced meat into a baking dish.
  5. Mix milk and eggs in a separate container. Pour the mixture over the macaroni and minced meat in the baking dish. Bake in the oven at 150 C / 300 F for about 40 minutes.
  6. Take the casserole out of the oven and sprinkle over the grated cheese. Increase the oven temperature to 225 C / 440 F and put the casserole back into the oven for 15 more minutes until the cheese melts and is golden.
  7. Enjoy! This dish is also great reheated.
