Köttbullar – Swedish meatballs

Of course, in the middle of meatballs week, we can’t skip out on the well known Swedish meatballs! Here is a delicious recipe for köttbullar! It makes for a wonderful weeknight meal, especially served with mashed potatoes and a bit of lingonberry jam.

Homemade meatballs beat most things and are always a hit. Here is a good basic recipe for meatballs that you can serve with cream sauce, mashed potatoes and lingonberry jam. You can also serve meatballs with a classic beetroot salad.

Ingredients

Meatballs

  • 500 grams / 1 pound ground beef.
  • ½ dl / 0.8 ounces breadcrumbs.
  • 1 dl / 3.4 ounces milk.
  • 2 tablespoons finely chopped onion.
  • 1 egg.
  • 1 teaspoon salt.
  • 1 pinch of black pepper.
  • 2 tablespoons butter.

Mashed potatoes

  • 1 kg / 2 pounds potatoes.
  • 2 dl / 6.8 ounces milk.
  • ½ dl / 1.7 ounces cream.
  • Salt and pepper.

To serve

  • Thinly sliced cucumber
  • Lingonberry jam

Instructions

Steps for the meatballs:

  1. Mix breadcrumbs and milk. Let swell for 10 min.
  2. Add minced meat, onion, egg, salt and pepper. Stir to a smooth batter.
  3. Shape the batter into even meatballs. Fry them in butter & rapeseed oil on medium heat for 3-5 min.

Steps for the mashed potatoes:

  1. Peel the potatoes and cut into pieces.
  2. Cook it until soft in lightly salted water for 10-15 minutes.
  3. Drain the water and press the potatoes through a puree press or mash with a pestle directly in the pan.
  4. Heat the milk and cream and stir into the potatoes. Season with salt and pepper. Stir the mash lightly. 

Serve the meatballs with mashed potatoes, sliced ​​cucumber and lingonberries.
