For a new and tasty addition out of the Finnish kitchen, take a look at this Juusto-puolukkapiiras! Or for us who can’t quite keep up with the Finnish pronunciations, a cheese and lingonberry pie!

Juusto-puolukkapiiras - Cheese and lingonberry pie

A typical Finnish ingredient takes a new twist in this cheese and lingonberry pie!

Ingredients

Pie crust

  • 75 grams / 2.6 ounces butter.
  • ½ dl / 1.7 ounces sugar.
  • 1 egg.
  • 1.5 dl / 5 ounces all purpose flour.
  • 1 teaspoon cardamom.
  • 1 teaspoon baking powder.

Filling

  • 200 grams / 7 ounces bread cheese/squeaky cheese.
  • 200 grams / 7 ounces lingonberries.
  • 3 eggs.
  • 200 grams / 7 ounces cream cheese.
  • 1 dl / 3.4 ounces sugar.
  • 1 teaspoon vanilla sugar.

Instructions

  1. Beat the butter and sugar. Add the egg and the combined dry ingredients to the mixture. Spread the dough into a pie pan with a diameter of approx. 27 cm / 10 inches.
  2. Spread the cubed bread/squeaky cheese and lingonberries on the bottom. Mix the eggs with a fork and add the whipped cream and the sugars. Pour into a pan.
  3. Bake at 200C/400F degrees for approx. 40 min. Cover the pan towards the end of baking so that the pie does not darken too much.
  4. Serve warm with custard.

Notes

The recipes notes the need of leipäjuustoa, or known as bread cheese / squeaky cheese in English. This is a Finnish cheese, and if you don't have a local shop that has this I found this recipe you can try to make your own.
