The Nordic countries love their pancakes, and we all have them. There aren’t huge variations between the basic pancake recipe, but at any rate, here is one from Iceland you might want to try!

Íslenskar pönnukökur - Icelandic Pancakes

A delicious and simple recipe for Icelandic pancakes!

Total Time 45 minutes

Ingredients

  • 200 grams / 7 oz all purpose flour.
  • 2 tablespoons sugar.
  • 1⁄2 teaspoon salt.
  • 1⁄2 teaspoon sodium bicarbonate.
  • 5 dl / 17.5 oz milk.
  • 1 teaspoon vanilla extract.
  • 50 grams / 1.7 oz butter.

Instructions

  1. Mix the dry ingredients in a bowl.
  2. Mix together one egg and half of the milk, stir into the dry mix.
  3. Mix together one egg and the remaining milk along with the vanilla extract. Stir into the batter, mixing well until batter is smooth.
  4. Melt the butter and whisk into the batter.
  5. Melt some butter in a frying pan and use a ladle to pour in a pancake. Make sure to pour in a very thin layer, as the pancakes are supposed to be thin. Bake until the surface starts to be dry on the surface.
  6. Turn the pancake over and bake until it's lightly brown.


This recipe yields about 20-25 pancakes.
To serve, roll the pancakes with some sugar. Or you can add other toppings to your liking, like strawberries and syrup.
