Delicious recipe for authentic Icelandic beef soup!

Ingredients

  • 3 l / 100 oz water.
  • 2.5 kg / 5.5 pounds soup meat on the bone.
  • 400 grams / 14 oz beets.
  • 400 grams / 14 oz potatoes.
  • 200 grams / 7 oz carrots.
  • 40 grams / 1.5 oz rice.
  • 1 small onion.
  • 1 leek.
  • 1 cube beef broth.
  • Salt to taste.
  • Black pepper to taste.

Instructions

  1. Rinse the meat and put it in the pot with water, putting it on medium heat.
    Make sure to keep it right at the boiling point, but not actually boiling.
  2. Skim the foam off the top of the water.
  3. Cut vegetables to desired size.
  4. Add vegetables to pot and bring to a boil, boil for about 40 minutes.
    Season with salt and pepper.
