A quick and easy weeknight dinner of fiskekaker and potato salad! Fiskekaker med potetsalat - Fish Patties with Potato salad Print Quick and easy delicious weeknight meal of fiskekaker with potato salad! Cook Time 20 minutes Total Time 20 minutes Ingredients 800 grams / 29 oz fiskekaker (Fish patties) Butter for cooking. Potato Salad 8 potatoes. 1 leek. 1⁄2 red bell peppers. 1 dl parsley. 2 dl / 7 oz low fat sour cream. 1 dl / 3 oz mayo. 3 teaspoons mustard. 3 tablespoons pickle juice. Instructions Fry the fish patties in butter in a frying pan until they are golden and warm. For the Potato salad:Boil the potatoes until tender in unsalted water, drain, cool, and peel.Dice the potatoes, cut the leek in thin slices, dice the bell peppers, and finely chop the parsley. Add potatoes, leek, bell peppers, and parsley in a bowl. Mix together sour cream, mayo, mustard, and pickle juice to a dressing. Pour the dressing over the potatoes and veggies, mix well.
