Today I posted this recipe for fiskekaker / fish patties, and here is one suggestion on how to serve them! A quick and easy weeknight dinner of fiskekaker and potato salad!
Fiskekaker med potetsalat - Fish Patties with Potato salad

Quick and easy delicious weeknight meal of fiskekaker with potato salad!

Ingredients
- 800 grams / 29 oz fiskekaker (Fish patties)
- Butter for cooking.
Potato Salad
- 8 potatoes.
- 1 leek.
- 1⁄2 red bell peppers.
- 1 dl parsley.
- 2 dl / 7 oz low fat sour cream.
- 1 dl / 3 oz mayo.
- 3 teaspoons mustard.
- 3 tablespoons pickle juice.
Instructions
- Fry the fish patties in butter in a frying pan until they are golden and warm.
For the Potato salad:
- Boil the potatoes until tender in unsalted water, drain, cool, and peel.
- Dice the potatoes, cut the leek in thin slices, dice the bell peppers, and finely chop the parsley.
- Add potatoes, leek, bell peppers, and parsley in a bowl.
- Mix together sour cream, mayo, mustard, and pickle juice to a dressing.
- Pour the dressing over the potatoes and veggies, mix well.
Serve the fish patties warm with the potato salad, and a nice salad next to it. Feel fee to garnish with chives as well!
