The Nordic countries all have our love of food from our oceans and lakes. For this weeks Norwegian recipe, we have this delicious fish dish – cod with bacon and carrot stew.

COD WITH BACON AND CARROT STEW

Boiled cod with potatoes, bacon and homemade carrot stew is lovely everyday food.

Ingredients

  • About 800 grams / 1.8 pounds cod fillet.
  • 0.5 dl / 1.7 ounces of salt per liter of water
  • 200 grams / 7 ounces diced bacon.

Carrot stew

  • 500 grams / 1 pound carrots.
  • 2 tablespoons all purpose flour.
  • 2.5 dl / 8.5 ounces milk.
  • ¼ teaspoon ground nutmeg.
  • 2 tablespoons chopped fresh parsley.

To serve

  • Potatoes

Instructions

  1. Cut the fish into portions. Boil water well in a wide pot and add salt. Add the fish pieces and heat to boiling point. Pull the pot aside, put the lid on and let the fish simmer for 8-10 minutes.
  2. Cut the bacon into cubes and fry it in a frying pan until golden and crispy. Set aside.
  3. Peel the carrots and cut them into cubes or slices.
  4. Boil the carrot pieces until barely tender in lightly salted water. Pour off the cooking water.
  5. Sprinkle the flour over the carrot pieces and mix quickly.
  6. Stir in the milk and bring to the boil while stirring. Make sure it doesn't burn at the bottom. Season with nutmeg and a little salt and pepper.
  7. Cook the stew over a low heat until the carrots are tender. Add a little more milk if you think the stew is too thick.
  8. Serve with boiled potatoes and sprinkle some chopped parsley over when serving.
