In a week of hearty meatballs, I figure it’s the best fit for Waffle Wednesday for this sweet chocolate recipe with a strawberry compote and whipped cream!

Chocolate waffle with strawberry compote is a fun alternative to the classic waffle. Cocoa and white chocolate are mixed in the batter and together with the vanilla-flavored cream, it becomes a wonderful treat for waffle day.

Ingredients

Strawberry compote

  • 250 grams / 9 ounces strawberries
  • ½ vanilla pod
  • 2 tablespoons powdered sugar
  • 1 tablespoon water.

Waffles

  • 125 grams / 4.4 ounces butter
  • 4 dl / 13.5 ounces all purpose flour
  • 2 tablespoons cocoa
  • 1 teaspoon baking soda
  • Dash of salt
  • 2 eggs.
  • 3 dl / 10 ounces cold water
  • 1 dl / 3.4 ounces chopped white chocolate

For garnish

  • 2 dl / 7 ounces whipped cream
  • Fresh basil

Instructions

For the strawberry compote:

  1. Trim and cut the strawberries into pieces. Split the vanilla bean lengthwise, scrape out the seeds and set aside for later.
  2. Boil sugar, water and vanilla bean. Remove from the heat, turn the strawberries over and let them steep at room temperature for about 30 minutes.

For the waffles:

  1. Melt the butter and let it cool.
  2. Mix the dry ingredients in a bowl and whisk together with the eggs and half the water. Add the rest of the water in a stream while whisking and finally whisk in the butter. Turn in the chocolate.
  3. Bake the waffles.

To serve:

  1. Lightly whip the cream together with the vanilla seeds.
  2. Serve the waffles with strawberry compote and cream, garnish with basil leaves.
