Waffle Wednesday – Røde vafler med krem – Beet Waffles

For this weeks Waffle Wednesday I wanted to share these beautiful red waffles! They get the red color from beets, so they are filled with vitamins, minerals, antioxidants, and fiber! 

As mentioned in other waffle recipes posted, for Norwegian waffles, or Scandinavian waffles in general, you will need a heart waffle maker. The biggest difference here isn’t that they’re heart shaped, but they are also a lot thinner than the usual American/Belgian waffles. A waffle maker like this would be perfect, and let’s you cook two at the time!

Røde vafler med krem - Beet Waffles

Delicious waffles colored red with the use of beets! A wonderful way to get use of your fall harvest!

Ingredients

Waffles

  • 2 beets.
  • 2 eggs.
  • 2 tablespoons brown sugar.
  • 2 tablespoons honey.
  • 3 dl / 10 oz whole milk.
  • 3 ½ dl / 12 oz all purpose flour.
  • 1 teaspoon baking powder.
  • 1 teaspoon vanilla sugar.
  • 2 tablespoons butter.

For Serving

  • 3 dl / 10 oz heavy cream.
  • 1 tablespoon sugar.
  • 4 tablespoons chopped nuts.

Instructions

  1. Preheat oven to 200 °C / 400 °F. Rinse the beets, cut into chunks and wrap in aluminum foil. Bake in oven until tender, about 40 minutes. When done, let them cool a bit before removing the peel and puree the beet.
  2. Whip together eggs, brown sugar, honey, and milk. Mix in all purpose flour, baking powder, and vanilla sugar and stir until it's a smooth batter with no lumps. Turn in the beet puree at the end.
  3. Preheat the waffle iron and grease it, and put a small ladle in the iron. Cook the waffles until set and they've gotten a nice color. Be sure to grease the iron between each waffle. Cool on cooling rack.


For topping:

  1. Add the sugar to the heavy cream and whip until it's a stiff cream. Serve the waffles with cream and chopped nuts.
