A delicious Danish recipe for beef roast with mustard glazed root vegetables! Comfort on a plate!

Ingredients

  • 1 kg / 2 lbs beef roast.
  • 1 tablespoon vegetable oil.
  • 3 onions.
  • 1 whole garlic.
  • Half a bottle of red wine.
  • Half a thyme bundle.

Vegetables

  • 600 grams / 21 ounces root vegetables (Carrots, celery root, others by your own preference)
  • 2 tablespoons coarse mustard.
  • 1 tablespoon dijon mustard.
  • 1 tablespoon honey.
  • Salt + pepper to taste.

For serving

  • 4 stems of broadleaf parsley.

Instructions

Steps for the roast:

  1. Brown the roast well in a pan in 1 tbsp. oil, season well with salt and black pepper. Place the roast in a roasting pan. 
  2. Cut the onion and garlic in half and roughly chop the thyme and put it all into the roasting pan.
  3. Add wine to the roasting pan, cover with tin foil and place in a preheated oven at 185°C / 365°F and bake for 1.5-2 hours until the meat is tender. Season the beef juice with salt and pepper.

Steps for the vegetables:

  1. Peel the root vegetables and cut them into thin slices and boil until tender. Then drain the water.
  2. Roast the root vegetables on a pan in mustard and honey, seasoned with salt and pepper. 

Serve:
Arrange slices of roast, onion and roast au jus and serve with mustard-glazed root vegetables, sprinkle parsley on top.
