 The second installment of Waffle Wednesday had to be something sweet since the first one was savory, right? 

These sweet apple waffles with raspberries are delicious, and such a neat twist from the usual waffle recipe!

Delicious sweet waffles with apples in the batter, topped with raspberries!

Just as a heads up, this waffle recipe requires the Scandinavian style heart waffle iron, not the thicker Belgian/American waffle irons.

Ingredients

  • 4 eggs.
  • 4 dl / 1.5 cup milk.
  • 2 tablespoons sugar.
  • 1 teaspoon baking powder.
  • 1 dl / 1⁄2 cup soy oil.
  • 150 grams / 2⁄3 cup whole wheat flour, fine.
  • 200 grams / 1 cup all purpose flour.
  • 2 apples.
  • Juice of ½ lemon.
  • 1 teaspoon ground cinnamon.

Toppings

  • Raspberries
  • Whipped Cream

Instructions

  1. Mix all the ingredients aside from apples together to a smooth batter. Let batter rest for at least 20 minutes.
  2. Grate the apple with a grater and mix into the batter before you cook the waffles.
  3. Cook the waffles in a oiled waffle iron until they're golden.
  4. Serve the waffles. Topping suggestions are ice cream with fresh raspberries or apple sauce and a little whipped cream. You could also sprinkle a bit of cinnamon on top before serving!
