You can never go wrong with a recipe for apple cake. This one has a Swedish twist with the wonderful taste from the almond paste and cardamom. Give it a try, it’ll be a excellent addition to your fika table!

Is apple cake perhaps the cake of cakes? Regardless, this variant with sweet apples together with almond pulp and the taste of cinnamon and cardamom is deliciously tasty and juicy. Dust the cake with icing sugar before serving.

Ingredients

  • 400 grams almond paste (See recommended products)
  • 150 grams butter - room temperature
  • 4 eggs
  • 3/4 dl powdered sugar
  • 1 dl all purpose flour
  • ½ teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 3 sweet apples

Garnish

  • Icing sugar

Instructions

  1. Pre-heat oven to 200°C/400°F.
  2. Roughly grate the almond paste. Beat together with the butter on low speed. Add the eggs one at a time and then sugar, all purpose flour, cardamom and cinnamon. Pour the batter into a greased spring form pan approx. 24 cm / 9.5 inches in diameter (for 8-10 pieces).
  3. Halve and core the apples. Cut into slices. Press the slices lightly into the cake. Bake in the lower part of the oven for about 40 minutes. Let cool.
  4. To serve: Dust with icing sugar when serving.
