Æblekage med nøddecrumble - Apple cake with nut crumble

Classic apple cake served with a wonderful nut crumble and whipped cream. Beautiful and tasty dessert that is easy to make.

Ingredients

Apple sauce

  • 1.2 kg / 2.6 pounds apples.
  • 150 grams sugar / 5 ounces (50 grams / 1.7 ounces less if you're using sweet apples.)
  • 1.5 dl / 5 ounces water.
  • 1 stick of vanilla.

Nut crumble

  • 50 grams nuts (Recommend a mix of almonds and hazelnuts)
  • 50 grams / 1.8 ounces oat meal
  • 50 grams / 1.8 ounces bread crumbs.
  • 75 grams / 2.6 ounces sugar.
  • 75 grams / 2.6 ounces butter.
  • 1 teaspoon cinnamon.
  • ½ teaspoon vanilla sugar.

For serving

  • 4 dl / 13.5 ounces heavy cream.

Instructions

Steps for the apple sauce:

  1. Peel the apples and cut them into small pieces. You should end up with approx. 1 kg without kernels and peels.
  2. Split the vanilla pod lengthwise, scrape out the seeds and mix them with a bit of the sugar to separate the seeds.
  3. Pour the apples, sugar, vanilla and the empty vanilla pod into a saucepan.
  4. Add 1 dl of water and bring to a boil. Let the apples cook on medium heat for approx. 10-12 min. until they are tender and cooked through - add more water if the porridge is too thick.
  5. Mash possibly the apples with a whisk, but let the porridge have a little structure. Put in the fridge and let it cool completely.

Steps for the crumble:

  1. Finely blend or chop the nuts and mix them with the other dry ingredients.
  2. Melt the butter in a pan and pour your crumble mixture over it. Fry it over medium heat until it turns golden and smells wonderful.
  3. Spread the crumble on a piece of baking paper and let it cool completely. Store it if necessary. in an airtight container until the apple pie is to be served.

Assembly:

  1. Whip the cream until firm.
  2. Collect the apple cake in serving glasses or a large bowl. Spread applesauce, crumble and whipped cream in 2 layers each. Top possibly with a little crumble and freeze-dried raspberries at the end.
