10 thin slices pork belly.
4 apples, sliced.
Handful of fresh parsley.
Freshly ground black pepper.
Butter for the bread.
Preheat oven to 175C°/350F° in a convection oven.
Drizzle salt and pepper on both sides of the slices of pork belly and place them on a oven rack. Place the rack in the middle of the oven with a pan underneath (to catch the drippings from the pork belly and avoid a mess in your oven.)
Bake the pork in the oven for about 45 minutes. If you'd like, turn the oven up to 220C°/ 425F° for the last few minutes for extra crispiness.
Place the pork slices on some paper to drain the fat. Pour fat from the oven pan into a frying pan and bring to a medium heat. Fry the apple slices in the fat, turning carefully to avoid mashing them. They are supposed to be lightly soft and warm throughout.
Place apples in a colander and let the fat drain.
Serve apples together with the pork slices, drizzle over fresh parsley. Tastes great with some good rye bread on the side.
