Æbleflæsk – Pork and apples

Here is a recipe for æbleflæsk – or pork and apples! A delicious classic from the Danish kitchen! 
Perfect match of sweetness from the apples and saltiness from the pork.

Ingredients

  • 10 thin slices pork belly.
  • 4 apples, sliced.
  • Handful of fresh parsley.
  • Salt flakes.
  • Freshly ground black pepper.

Sides

  • Rye bread.
  • Butter for the bread.

Instructions

  1. Preheat oven to 175C°/350F° in a convection oven.
  2. Drizzle salt and pepper on both sides of the slices of pork belly and place them on a oven rack. Place the rack in the middle of the oven with a pan underneath (to catch the drippings from the pork belly and avoid a mess in your oven.)
  3. Bake the pork in the oven for about 45 minutes. If you'd like, turn the oven up to 220C°/ 425F° for the last few minutes for extra crispiness.
  4. Place the pork slices on some paper to drain the fat. Pour fat from the oven pan into a frying pan and bring to a medium heat. Fry the apple slices in the fat, turning carefully to avoid mashing them. They are supposed to be lightly soft and warm throughout.
  5. Place apples in a colander and let the fat drain.
  6. Serve apples together with the pork slices, drizzle over fresh parsley.
    Tastes great with some good rye bread on the side.
